Protein Packed Baked Potato With Truffle Oil, 230 calories.

This is my go to lunch when I am in a rush or low on groceries. This is also an insanely cheep meal and it tastes so elegant with the truffle oil. If you do not have truffle oil you can use garlic oil or good extra virgin olive oil (you will know it is good if it is peppery and has a strong flavor). The idea is to stay away from the butter, we want the good fats from the olive oil. Not only will it give you a boost of energy, it also helps in lowering cholesterol and makes your hair and skin healthy and glowing.

What you will need:
1 potato medium size
1 tsp truffle oil
1/4 cup Greek yogurt
1 scallion finely chopped (just the white and light green parts)
Salt and Pepper to taste

There is 3 ways you can make this potato first stab it with a fork a few times on both sides then choose your method of cooking:

1. You can microwave it for about 4 minutes.
2. You can bake it for 1 hour in a oven set at 350.
3. You can BBQ it for 45-60 minutes.

You will know it is ready when you can easily stick a fork or knife through it. Once that little baby is ready you can slice it in half and drizzle the oil and add the salt. Then top with yogurt, scallions and pepper. If you have some left over chicken or steak it is a wonderful topping, just go easy remember you are adding calories. I like to enjoy this with some soda water in my favorite Tiki Mug with a slice of lemon.

Many people I encourage to try Greek yogurt say they do not like it. Well, it is time to try it again, but in a new way. If you eat it by it’s self you may not like it, I did not at first. If you use it in place of sour cream however, it is so close to the real thing you may not be able to tell the difference. Greek Yogurt is 30 calories per 1/4 cup and Sour Cream is 245 calories! And if that is not enough to convince you to try it once more, Greek yogurt has double the protein and half the carbs, furthermore sour cream has 24 grams of fat and Greek yogurt has ZERO! Try the swap, if you truly want to drop weight you have to be willing to try new things and this is a great place to start.
