My husband and I often ask the question: “If you could only drink one libation for the rest of your life what would it be, beer or wine?” Well, we have recently had to add one more category, Champagne. This is not just a dessert, it is a cocktail and conversation piece, perfect for a dinner party or a romantic date night (eh hemm- Valentine’s Day). The key here is to use good Champagne or Sparkling Wine, I love Tobin James’ Dream Weaver, Wilson Creek would probably be great too (a fantastic Almond Champagne) just make sure its a wine you would drink, don’t go cheep you will tell the difference.
What you will need for 2-
1 Cup good Champagne, Sparkling White Wine or Prosecco
½ cup Frozen Peaches
Add ingredients to blender, whip until smooth, transfer to fancy glasses and place in freezer for 3-4 hours. If you use fresh peaches that is fine too, but you will need 7-8 hours in the freezer and will need to peel them first. I would love to garnish with raspberries, but alas I am allergic… it is a tragedy but please don’t let me stop you.
This also makes a great cocktail, just don’t freeze them, instead serve immediately as blended Bellinis. The peaches have loads of Potassium and Vitamin C, the Champagne is a natural “relaxant” at least that’s what I tell myself.
