I had some left over Taco fixings and a craving for nachos so I made these today and they were delicious! If you need some left over taco fixings look up my Spicy Taco recipe (there is a “Search” bar to the right). This would be great for the Superbowl or just for a weeknight dinner. Enjoy with a cold glass of beer and you will be in game day heaven!
Makes 4 servings-
3 Whole wheat tortillas
1 tbsp olive oil
1 tbsp dried cilantro
½ tsp chili powder
1 cup left over taco meat and bean mix
½ cup low fat cheddar cheese shredded
2 jalapenos sliced
½ avocado mashed
¼ cup Greek yogurt*
¼ cup good salsa
Pre-heat oven to 350 and cover 2 rimmed baking sheets with foil.
Mix the oil, cilantro and chilli powder in a bowl. Using a basting brush rub all over one side of the tortillas, fold tortillas in half, cut down the middle and then in 4’s so you have 8 chips per tortilla, arrange on the baking sheets and bake for 10-12 minutes spinning the baking sheets 180 degrees half way through.
Remove baking sheets from oven and allow the chips to cool on the sheets until the sheet and the chips are cool enough to handle. Top each chip with some of the taco mix and the cheese and place back in the oven for 5 minutes making sure the cheese is melted.
Remove and gently place each chip onto a serving platter, smear on some avocado, salsa, a small dollop of Greek yogurt* and top with a jalapeno slice and you are ready to serve.
* Don’t knock it until you try it, Greek yogurt is a great swap for sour cream. A ¼ cup of Greek yogurt has only 30 calories, sour cream 120 calories. It tastes the same, has the same consistency, and on something like this where there are so many other flavors going on no one will notice the difference, I promise you!
