Serves 4-
4 salmon filets
Salt & pepper to taste
½ cup walnuts, finely chopped
¼ cup dried cranberries, chopped
2 Tbsp. butter, melted
2 Tbsp. parsley, chopped
1 Tbsp. Dijon mustard
1 tsp. orange zest
Preheat oven to 375⁰. Grease baking sheet; season both sides of salmon filets with salt & pepper. Arrange filets on baking sheet. In small bowl, combine remaining ingredients; mix thoroughly. Press mixture onto salmon filets. Bake 20 minutes, until topping is lightly browned. Do not turn filets over.
Serves 4, with 290 cal per serving
