Whenever I have friends come over I whip these little babies up, all I need to grab is a baguette at the bakery and some goat cheese for a quick appetizer. They take about 10 minutes and impress everyone, pair with a nice crisp Chardonnay and you have a happy hour perfect for catching up with friends or unwinding after a long day.
Makes 15 Bruschettas-
1/2 Sourdough Baguette thinly sliced
1 Garlic Clove
1 tbsp Good Extra Virgin Olive Oil
1/4 cup Goat Cheese
1/2 tsp Balsamic Vinegar
Handful of fresh Basil
Preheat the oven to 350, spread the sliced baguette out on a rimmed cookie sheet and bake for 7-13 minutes, check after 5 minutes and keep an eye on them. Remove from the oven, allow to cool for a couple of minutes, once you can handle them rub gently with the garlic clove on one side.
Move to a pretty plate, drizzle the oil on, then top with goat cheese, spreading it on with a knife. Tear the basil into tiny pieces over the plate and scatter all over the tops, then drizzle on the vinegar and if you like a little salt and pepper to taste.
