Who doesn’t love pancakes? These ooze chocolate when you cut into them and are so decadent you won’t even need syrup. Make them this weekend and impress your entire family, they also make great leftovers just re-heat in the microwave for 20 seconds and breakfast is ready.
Makes 24 pancakes-
3.5 oz Pear Baby Food
1 cup Almond Milk
1 tsp Vanilla Extract
2 eggs
1 1/4 cups flour
1 tablespoon sugar
4 teaspoons baking powder
3/4 teaspoon salt
1/2 cup Mini Dark Chocolate Chips
In a large bowl combine flour, sugar, baking powder and salt and set aside. In a medium bowl combine the milk, baby food, eggs and vanilla and whisk well. Pour the wet mixture into the dry and mix well, add in the chocolate chips and combine. Let this mixture sit for 10 minutes to an hour, it will rise and fluff up a little.
Heat a griddle or large skillet on medium, spray with cooking spray and using a ladle pour your pancakes, once they bubble all over it is time to flip. Never squish down only flip once, good pancakes are fluffy because they have been treated with care.
Plate and serve, sprinkle with powdered sugar if you like and dig in.

that Pear Baby Food, is that just pureed pears? (wouldn’t it be healtier, if you just puree some fresh pears? or make a kind of compote bout them (like with apples, for applesauce but with less sugar then (or stevia added) )?
