My husband Chris loves to cook almost as much as I do. Tonight he hit a home-run on dinner, these sandwiches were spicy and hearty, the perfect “Man Meal”. The dip was cool and tangy Blue Cheese goodness, because there is minimal cooking for this meal it took him only 25 minutes.
So today, on our 6 year wedding anniversary I dedicate this post to him. Chris you are a wonderful cook, but an even better husband. Happy anniversary!
Makes 2 Sandwiches-
2 Boneless Skinless Chicken Breasts
2 tsp Paprika
2 Chilli Powder
1 tbsp Olive Oil
1/2 cup Hot Sauce- your favorite, we love Pepperplant
2 Whole Wheat Hamburger Buns
1/4 Avocado- optional
For the Blue Cheese Dip-
1/2 cup Greek Yogurt
2 Scallions sliced thinly
2 tbsp Blue Cheese, crumbled
4 Celery Stalks
In a small bowl combine the yogurt, scallions and blue cheese. Mix well and set aside.
In a small bowl combine paprika and chilli powder, rub all over the chicken. Lightly coat a skillet with cooking spray heat on med-low, place the chicken breasts into the skillet and cook each side for 6 minutes. Add the hot sauce and olive oil, mix all together and bathe the chicken in the sauce, cook for another 3 minutes on low heat turn frequently to coat evenly.
Toast hamburger buns then smear one side of each bun with avocado, sprinkle a little salt and pepper. On the other half of the bun place the cooked chicken breast. Spoon out the blue cheese dip and plate the celery, that’s it. An easy weeknight meal everyone will love.
