I had a dozen hard-boiled eggs come Easter afternoon so I made some yummy low calorie deviled eggs. This only takes about 5 minutes if you already have the eggs hard-boiled. I swapped out the mayonnaise for Greek yogurt and no one could tell the difference! If you usually use Miracle Whip in your Deviled Eggs then add a pinch of sugar to this recipe, the yogurt is slightly more tart and Miracle Whip.
Greek yogurt is extremely low in calories, boosts your metabolism and is packed full of calcium and protein. It is a great swap for mayonnaise and sour cream try it yourself in your favorite recipes.
Makes 14-
7 Hard Boiled Eggs
1/4 cup Greek Yogurt
1 tsp Mustard
1 1/2 tbsp Sweet Pickle Relish
Pinch of Salt and Pepper
Paprika for decoration
Cut eggs in half and scoop out the yolks, put yolks in a medium bowl and the whites on a pretty plate.
Add the yogurt, mustard, relish salt and pepper to the yolks and mash all together with the back of a fork. Make sure the yolks are completely mashed and all the ingredients are incorporated.
Using a small spoon add the yolk mixture to the egg whites, top with paprika and serve. You can make ahead, cover with cling wrap and store in the fridge for a few hours.

Fat: 2.5
Fiber: 0
Protein: 3.5
Carbs: 1
My Easter Feast, it was just my Husband, Daughter and Father and I so we kept to simple. I served my Angel Eggs with my favorite appetizer Basil and Goat Cheese Bruschetta and my Baked Chicken with Onions and Potatoes.
So cute, I just noticed I forgot to remove my Daughter’s place mat before I snapped the pic. Just goes to show this is a REAL person making food in a REAL home

What a great idea. I also love egg salad sandwiches so I applied your recipe to my leftover Easter eggs. Just diced up the eggs and added the yogurt, mustard, and relish to taste. I like a little ground pepper too. I didn’t even miss the mayo or all that extra fat !!! Thanks Audrey !!!

I don’t have any greek yogurt, but have plain non fat yogurt would that work?
It will not be as thick, you can try it but they may be runny.
