Caliente Baked Potato- 420 calories

As you may have seen in many of my posts, I am over the moon for foods that will boost my metabolism. This is a good one, the jalapeno, yogurt and beans all boost your metabolism for a sexy, lean new you… with a full belly too :)

I wasn’t sure what to call this meal, so I put the above picture up on facebook and let my friends and family take a crack at it. Here are all the names I received: Southwest Bake Potato, Jabba’s Palace, DINNER, Los Kitchen Sink, Outside the Box Baked Potato. (a.k.a. Jabba’s Palace), Fiesta Grande, Caliente Baked Potato, Mexican Baked Potato, Mexi Stuffed Potato and THE SANTA FE SPUDZILLA. It was a tough choice, but Caliente Baked Potato was my choice in the end, all you Tiki Caliente peeps will be proud I’m sure. A special thanks to Alma A. for coming up with this fun name.

Makes one large lunch or split in half for a delicious side dish-

1 Medium Potato

1 tsp Olive Oil

1/2 Bell Pepper roughly chopped

1 Jalapeno seeds and ribs removed, roughly chopped

1 Shallot roughly chopped

1/4 cup Corn

1/4 cup Black Beans

1/4 Avocado

1/3 cup Greek yogurt

Hot Sauce- optional (I added after the pic)

Handful Cilantro- optional (again added after the pic)

 

Pre heat oven to 425. Wash potato, stab a couple of times on each side with a fork and microwave for 3 ½ minutes. Place the potato in the oven, right on the rack for 20 minutes.

While the potato cooks make the topping. In a medium skillet heat the 1 tsp olive oil on medium add the bell pepper, scallions and jalapeno stir often until the bell pepper softens. Turn heat down to low and add the beans and corn and cook for another minute or so, until they are warmed up.

By now the potato should be ready, remove from the oven and place in a bowl. Slice the top open and squeeze the ends just like Mom use to. Top with the bell pepper mixture, the Greek yogurt and avocado, some hot sauce and cilantro if you like and you are ready to eat.

If you are going to serve as a side dish cut the potato in half and using the back of a fork smash the white flesh of the potato halves to loosen it up a little, then top with bell pepper mixture, some Greek yogurt and avocado. Add the hot sauce and cilantro if you like and serve with Cayenne Steak or a Whole Baked Chicken.

  4. Wow! This recipe is now a tried and true fave for me. I have just recently vowed to eat better and healthier. I stumbled onto your recipe and thought it sounded good. Although I left out the Jalapeno, as I can’t eat spicy anything anymore :( and substituted frozen peas as I didn’t have any corn. This was by far the most scrumptious baked potato I have ever experienced…who needs cheese and bacon with the taste being such a wonderful yummy experience and very filling. Next time I will make it with corn. Oh and btw, I made all of it on our BBQ as it’s very hot here I didn’t want to heat the house and I made monster size for the family and leftovers and can make while camping too!
