This is my favorite go to meal when I just don’t have time to make anything. I am eating it now for breakfast, but I have also made for lunch and dinner. I’m sure it would make a great appetizer for last minute guests, but I have never been willing to share this yummy meal so I wouldn’t know.
This is the 1st time I am posting something that is not 100% homemade, but I get the naan at Trader Joe’s and I know I can trust them for all natural good food. You can also check your local Health Food Store or if you are lucky enough to have an ethnic food store by you, you may find naan there. I’m sure one day I will have a homemade Naan recipe for all of you, but this naan from Trader Joe’s is so delicious and easy to make it will be hard to beat.
Often I get goodies in the mail from fans. Last week I got a big box of goodies from Kati and in it was some to die for Basil Pesto Grapeseed Oil. I tried it on this dish in place of my usual olive oil and it’s fantastic! At only $13 for this oil you will get some big bang for your buck! Add a pesto flavor to any meal without all the cheese and extra calories.
Makes one Naan Pizza-
1 piece of Trader Joe’s brand Garlic Naan- try w/ whole wheat pita
1 tbsp Chevre Goat Cheese- or any crumbly cheese like feta
1/4 cup of Arugula
1/2 tbsp good Extra Virgin Olive Oil or Basil Pesto Oil
1/2 tsp good Balsamic Vinegar
Salt and Pepper to taste
Heat oven to 500 and toss in a pizza stone or a cookie tray. Take the naan out of the freezer, top with arugula, cheese and oil. Place on pizza stone in the oven for 3 minutes, remove from oven, cut w/ a pair of scissors or pizza wheel, drizzle on the balsamic vinegar add salt and pepper and insert into mouth.
