I have been on an Oatmeal kick lately, and with all these yummy berries on sale at the grocery store and all over at the farmer’s market I wanted to go for a fun metabolism boosting antioxidant filled breakfast, and it was delicious! If you have frozen blueberries they will work well too, just defrost overnight in the fridge.
1/2 cup Oatmeal
20 Blueberries
2 tbsp Greek Yogurt
1 tsp Vanilla Extract
1 tsp Honey
In a small sauce pan get 1 cup water boiling then add oatmeal and reduce to low until all water is absorbed. While the oatmeal is doing its thing smash 10 blueberries with the back of a spoon in a small bowl, mix in yogurt, vanilla and honey and set aside.
Once your oatmeal is done turn off heat and add the yogurt mixture to the oatmeal and mix well. Drop half of the remaining berries into the bottom of a small bowl, top with oatmeal and garnish with your remaining berries. Serve with a smile and a cup of green tea, you are enjoying a metabolism boosting breakfast!

I make something similar except I do not cook the oats. I soak them overnight in soya milk. They are like ice-cream in the morning and you can add whatever you want
That sounds AMAZING!! I am gonna have to try this. I typically don’t have Soy Milk in the house, do you think Almond Milk would work?

you can use any kind of fluid. I like to use sweetened soya milk just cos I like it… Almond or Rice milk would work great too…
I have been doing the Dukan diet and this will make a great change instead of an oatbran pancake everyday.
