If I want something “naughty” I cut it in half, or in quarters and have just what I can “afford” calorie wise. In this case 1/2 of a grilled cheese sandwich. If you give up the things you love, you may give up on healthy living all together and might back slide.
Learn to modify the things you love, either by cutting the quantity or by cutting the calories. I did both here. I cut the sandwich by half and added Dijon Mustard to make it creamier without more cheese. If you are making this for just yourself cut everything in half, including just one slice of bread.
Makes 2 halves-
2 slices Sourdough Bread
1 slice Lite Jarlsberg cheese
1 slice Jack Colby cheese- I had a combo of both, choose your favorite of the two
1 tbsp Sharp Cheddar
1 tsp Dijon Mustard
1 tsp Olive Oil
You have probably made a grilled cheese sandwich before, so I can leave you alone with the ingredients to do your thing, but just in case here you go:
On one slice of bread top with mustard and spread evenly, top with cheeses and top with remaining slice of bread. Brush each side of the sandwich with oil and place on a medium pan on medium heat until each side is browned. Slice in half than in half again. Plate and devour.
