Creamy Cranberry Vanilla Oatmeal- 368 calories

If you are a follower of my blog you already know I have an oatmeal obsession. It raises your metabolism, lowers cholesterol and fills you up. I use to get the little Quaker packets and truth be told, I ate them but didn’t really love them like I LOVE this recipe. Those little packets are full of sugar, preservatives and thickening agents, YUCK!

 

This is 100% all natural food that your body knows how to process… fake sugars and chemical derived preservatives are not found in nature and your body doesn’t know how to process them. If you have a nut allergy use the milk of your choice and add some chopped apples for crunch.

 

Serves 2-

2 cups Unsweetened Almond Milk

1 cup Steel Cut Oatmeal

3 tbsp Dried Cranberries

1 tsp Vanilla Extract

1/2 tsp Cinnamon

2 tbsp Walnuts

2 tsp Light Brown Sugar- optional (add 11 calories per serving)

 

In a medium pan combine the almond milk, cranberries, vanilla and cinnamon. Bring to a slow boil and add the oatmeal. Reduce to low and stir often until all the liquid is absorbed, move to 2 bowls top with walnuts and if you desire some light brown sugar. DIG IN!

Fat: 29   mostly from the walnuts, “good fats”

Protein: 8

Carbs: 54

While you have the oatmeal out whip up some Giant Oatmeal Raisin Breakfast Cookies, kids love them and they are great for a breakfast on the go.
