I love Greek Yogurt, so when I saw Greek Yogurt Ice Cream I grabbed a tub of vanilla and waited patiently until dinner was over to try a scoop. I didn’t like it, how devastating! Greek Yogurt naturally boosts metabolism and anything that boosts metabolism is a plus in my book. I decided I would not give up I would find a way to make it delicious and I did, this will go well on ice cream, waffles, pancakes, yogurt, pound cake or even cheese cake there are no preservatives or chemicals just all natural strawberry goodness.
One note, don’t freak out because I add sugar. Sugar is natural, your body knows how to process it so do not grab the fake sugar and add that instead. A tablespoon of powdered sugar has only 31 calories, you burn that just scooping the ice cream!
Makes about 2 cups-
3 cups fresh or frozen Strawberries
4 tbsp Powdered Sugar
2 tsp Lemon Juice
If you are using frozen strawberries (I did, no shame in that) pop them in the microwave for 30 seconds, if they are soft take them out (if not give them another 30 seconds) and place in a blender or food processor. Add the sugar and the lemon juice and blend until smooth add a tbsp water if needed, place in jar and top ice cream, yogurt, pound cake, cheese cake, waffles or pancakes and dig in.
Store in fridge for up to a week. Check out my Fat Free Chocolate Syrup too, it is amazing on ice cream and in milk but it goes best in my Blended Mocha Cappuccino.

Is powdered sugar the same as the granulated sugar?
No, it is not the same. It is the consistency of Baby Powder. It is also called Confectioners Sugar.
