Garlic Rosemary Baked Chicken- Step by Step Video

The time has come to start doing video demonstrations of cooking. I get tons of questions when it comes to baking a chicken, it sounds hard and is intimidating the first time you bake a whole chicken but once you have done it a few times it becomes the easiest meal ever.

I shot this video in my home, in my modest little kitchen. I am just a real person like you, no fancy kitchen, no camera crew. Just my recipes and I, direct to you.

Makes one Whole Chicken-

One Whole Chicken, whatever size you like

4 Cloves Garlic

2-3 Sprigs Fresh Rosemary

1 Lemon

2-3 tbsp Olive Oil

Salt and Pepper

Preheat oven to 350, wash and empty the chicken of the giblets, liver all that stuff. Rub salt and pepper all over the chicken including the empty cavity.

Using a zester orĀ Microplane Fine Grater shred the garlic into a medium bowl, stop when it gets to the point you might hurt yourself and set the rest of the garlic clove aside (keep it for later) and move on to the next. Then zest lemon into same bowl. Then squeeze lemon of all its juices into the bowl, add oil, salt and pepper. Mix together.

Take the lemon husks that you have zested and drained of juice and place inside the open cavity, then add the rest of the garlic and the rosemary. Cover with the marinade and place in oven for 2 hours, baste after 1 hour and once again 30 minutes later.

Remove from oven and let sit for 15 minutes before you cut into the chicken. See the attached video for directions on how to carve.

    • You can, but the flavor will be totally different. It’s just my husband and I with a 3 year old. I bake the entire chicken, carve it then freeze 1/2 of it. Anytime I need some chicken or I don’t have time to make dinner I pull it out. I do that with all left over proteins and it’s a life saver on nights when I need to whip up dinner in 10 minutes!

      PLUS you can get a whole chicken for about $5 on sale, that is less than 2 chicken breasts.

      Try it for a Sunday night meal. It is so delicious when it is baked whole, even the breasts have so much more flavor. You could even plan on making chicken tacos the next night and then my chicken mac and cheese bake the following night all with the left overs.
