Oh boy, I love avocados!! They are on sale right now and I am in heaven, I won’t pay full price for any produce, so now is the time of avocado indulgence. Avocados are so good for you, they are full of fiber and potassium, they build a strong body and aid in hair and nail growth too. Makes 2 Sandwiches-
4 Slices Sourdough or Whole Wheat Bread
1/4 cup Sharp Cheddar
1 medium Avocado thinly sliced
Salt and Pepper
Hot Sauce or Salsa- optional
Place one slice of bread on a plate, layer 1/4 of the cheese, then 1/2 avocado slices, another 1/4 the cheese, add hot sauce and sprinkle on salt and pepper if desired, place second slice of bread on top. Repeat for the second sandwich.
Heat a ridged cast iron grill on medium, spray w/ cooking spray or olive oil in a Misto Can, gently move the sandwiches to the pan, cover with foil to help all the cheese melt and then place another pan on top of the sandwiches, the heaviest one you’ve got, this will squish down the sandwiches without needing a fancy Panini Press. After a couple of minutes flip sandwiches and put the heavy pan on top again. Remove from pan, slice sandwiches in half and enjoy.
