I love the combination of Peanut Butter, Bananas and Honey. When I was little my Mom would combine the three for me in a sandwich, so this combo is one of those nostalgic meals that makes me feel all warm and fuzzy and bring me back to an easier time in my life.
In my quest for new metabolism boosting meals I came up with this little number. Almonds boost metabolism so I swapped out peanut butter for almond butter and milk for almond milk, oatmeal is also a big metabolism booster so that makes three ingredients that boost metabolism.
I came across an Almond Butter with Flax Seed yesterday at Trader Joe’s, usually I prefer a “No Stir” Almond butter but Flax Seeds are so good for you, lowering Cholesterol, fighting Diabetes and even protecting your body against Cancer, so I grabbed it and took it home. After I got a chance to ” Stir It Up” I realized this would not be something I would want to spread on toast but adding it to oatmeal or cookies was delicious and the runny consistency was not an issue.
Makes 2 servings:
2 cups Unsweetened Almond Milk
1 cup Steel Cut or Old Fashioned Oatmeal
1 Bananas thinly sliced
2 tbsp Almond Butter
2 tsp Honey
In a medium sauce pan combine the Almond milk and oatmeal, heat on low until most of the liquid is absorbed. Add in 1/2 of the banana slices and the almond butter mix together and let the oatmeal soak up the rest of the milk. Once all the milk is absorbed, about 15-20 minutes total, move to two bowls, top with more banana slices and drizzle on the honey.

Protein: 8
Carbs: 66

Audrey, I have to tell you…I made this on Monday for my husband and I. We loved it.
When he got home from work, he couldn’t stop talking about how much energy he had during the day! He absolutely loved the effect this breakfast had on him and I now have strict orders to make this every day. lol
I was so happy he liked it. We’re so different, we never agree on anything…and this, we did!

Wondering what you use for the oatmeal.? normally at home I use the 1- 3 minute quaker oats .
I always use Old Fashioned Oats, Steal Cut will also work but the quick oats like what you have may be too mushy. You can try it and modify the liquid to match what the box says.

Any recommendations for Almond Butter, I have tried two brands and wasn’t a fan of either. Maybe I just don’t like almond butter…. is peanut butter a terrible option? I am using an all natural peanut butter that I love!!
As long as you are having all natural Peanut Butter is fine. Almond butter boosts metabolism and is lower in calories that is why I like it.
