I made these yesterday for lunch, I usually go meat free at lunch. It saves calories and is so easy for me, just look at my lunch recipes, going meatless is not as painful as it sounds! Yesterday was the exception, my husband had purchased some fancy bacon, it was staring at me in the fridge saying “eat me” so… I did!
Eating skinny all the time can be difficult, if you take away what you love to eat you may backfire. Think about it, think about all the diets you have tried and how you gave up and gave into what you really wanted to eat. Well, if you tell me I can’t have bacon, real bacon forget it… that diet is not for me!
The key to find a way to have what you want in a skinnier way. If you can find a substitute for what you love, by all means have that instead, but I am not one of those people who buys into turkey bacon tasting “just as good”. It’s not! So I have just a little and enjoy the heck out of it, that is how I have succeeded in weight loss. Have what you love, enjoy the heck out of just a little, then go right back to your skinny eating lifestyle.
1 large Potato
1 tsp Garlic Oil
1 slice of Thick Cut Bacon chopped
1/2 cup Broccoli heads chopped
1/3 cup Greek Yogurt
1/4 cup Shredded Cheddar Cheese
Salt and Pepper to taste
Hot Sauce- optional
Heat oven to 425. Stab the potato a few times with a fork and heat in the microwave for 3-5 minutes until cooked through.
In a medium skillet heat the oil on medium high then add the bacon and broccoli and cook until crispy and delicious.
Once the potato has cooled enough slice in half, length wise. Using a spoon hollow out the flesh/insides of your potato halves, move 1/2 of the potato’s flesh (you only want 1/2 of the insides, discard the rest) to a small bowl and smash with the back of your spoon or a fork. Then add the Greek yogurt, the cheese (hold some back for the tops) and the broccoli bacon mixture, add salt and pepper and a little hot sauce if you like and mix together. Then fill the hollow halves of the potatoes with the mixture and add the rest of the cheese. Place in the oven for 10 minutes, remove from oven and plate.
I had this lunch but it would make a delicious and easy side dish, you could even make before and just fill and pop in oven before dinner.
