Mediterranean Bacon Tomato Pizza- 269 calories

Many of my recipes come from grabbing what I have and working it into an old favorite recipe. My naan pizza was the “old favorite” and what “I had” was turkey bacon and tomatoes.

You can get the Naan at Trader Joe’s, it’s all natural as is anything in the store that they put their name on. Your local grocery store may have some Naan either in the freezer section or in the bread section, you can also substitute with pizza dough or whole wheat pita.* Rule of thumb for all natural food, if you can’t pronounce an ingredient, don’t buy the product.

INGREDIENTS

1 piece of turkey bacon roughly chopped

1 tsp Extra Virgin olive oil

1 piece of Trader Joe’s brand garlic naan

1 tbsp shaved Parmesan cheese

1/4 cup roughly chopped tomato

Salt and pepper to taste

DIRECTIONS

- Heat oven to 500.

- In a medium pan heat oil on medium high then add chopped bacon, cook until browned.

- Take the naan out of the freezer, top with tomato chunks and bacon. Drizzle the oil left in the pan over the pizza.

- Place on a cookie sheet and bake for 5 minutes or until the naan is lightly crisp.

-Remove from oven, cut w/ a pair of scissors or pizza wheel, top with cheese, salt and pepper.

*If you substitute the naan for pizza dough or whole wheat pita add 1/2 garlic clove finely chopped and a pinch of coriander leaves or parsley.
